Storage
Store carrots in the fridge in a sealable bag or container.
Preparation
Carrots don’t have to be peeled, especially if grown organically! Most of the Vitamin C is stored in the peel.
Seasonality
Carrots are available for much of the year with small thinning carrots available starting in early summer, larger carrots mid-summer through fall, and storage carrots through the winter months.
