Storage
Hot peppers can be stored in the refrigerator, unwashed, and placed in a paper bag or perforated bag.
Prep Tip
The pith of the pepper contains capsaicin, the chemical that makes peppers hot. Remove the pith for a more mild (but still spicy!) flavor.
Seasonality
Hot peppers are often available as early as July and as late as October, with dried peppers available year-round.
