Rad.ish Vegan Papas Chorizo Burrito

Try this recipe for vegan Papas Chorizo Burritos from Rad.ish, formerly of Traverse City!

Ingredients:

  • One huge flour tortilla
  • Cooked potatoes (skin on)
  • Chopped onions
  • Favorite salsa
  • Cilantro
  • Onions
  • Vegan chorizo (I use Cacique Soy Chorizo)
  • Favorite vegan cheese
  • Beans (canned, from scratch, whole, or refried)
  • Cumin, salt, pepper, garlic powder, smoked paprika

Instructions:

  1. Cook potatoes until soft, then chop.
  2. Add potatoes to a pan with butter and oil. Add seasoning.
  3. Add onions until translucent.
  4. Then add chorizo until fully cooked.
  5. Add cheese on top, turn off the flame and place a lid over the pan.
  6. Heat your beans through.
  7. Cook your tortilla, then add all your toppings like cilantro salads, fresh onions, then your cooked mixture & beans. The best!
