Try this recipe for vegan Papas Chorizo Burritos from Rad.ish, formerly of Traverse City!
Ingredients:
- One huge flour tortilla
- Cooked potatoes (skin on)
- Chopped onions
- Favorite salsa
- Cilantro
- Onions
- Vegan chorizo (I use Cacique Soy Chorizo)
- Favorite vegan cheese
- Beans (canned, from scratch, whole, or refried)
- Cumin, salt, pepper, garlic powder, smoked paprika
Instructions:
- Cook potatoes until soft, then chop.
- Add potatoes to a pan with butter and oil. Add seasoning.
- Add onions until translucent.
- Then add chorizo until fully cooked.
- Add cheese on top, turn off the flame and place a lid over the pan.
- Heat your beans through.
- Cook your tortilla, then add all your toppings like cilantro salads, fresh onions, then your cooked mixture & beans. The best!
