COOKING WITH BEETS
Storage
Remove the leafy tops from the beets before storing them. The roots can be kept in a cool and dark place, such as the refrigerator, for several weeks.
Seasonality
Beets are available year-round but are most commonly harvested in the late summer and fall.
Prep Tip
Be sure to wear an apron over your holiday clothes and peel away from yourself to avoid stains. The greens are edible and can be used as any other leafy green.
