Simple Black Bean Soup

Black Bean Soup from Greentree Cooperative in Mount Pleasant, MI. Bowl is surrounded in black beans, tomatoes and green onion.


1 15 oz can refried black beans

2 cups chicken or vegetable broth

1/2 cup sweet corn, frozen or fresh

1/2 cup chopped tomatoes or your favorite salsa

1 Tbsp taco seasoning (chili powder, cumin, garlic, paprika, crushed red pepper)

Optional toppings: green onions, shredded cheese, or sour cream


Combine refried black beans and broth in a 2-quart saucepan over medium heat. Stir until well combined. Add all other ingredients. Stir until taco seasoning is fully incorporated. Heat until soup reaches a low simmer. That’s it! This recipe is easy, fast, and naturally low in fat.
