"Let the ingredients speak for themselves." Chef Kris' passion for food cannot be separated from his passion for his surroundings. With roots in the culinary scene of Yellowstone National Park, Chef Kris went to find his "happy place" in the scenic upper peninsula city of Marquette, Michigan, where he received his culinary degree from NMU. The mountains, forests, Lake Superior sunrises, and the Northern Lights are the fuel to his fire. Chef Kris found freedom within The Delft Bistro to create seasonal menus, allowing him to embrace local food, fellowship, and culture through our farms and artisans within the Marquette community; all with the vision to bring the U.P. to a new level of culinary innovation.
