Storage

Parsnips may be stored for months in a sealable bag in the refrigerator. In the garden, parsnips may be left in the ground in the winter and used as needed.

Seasonality

Parsnips are harvested in the fall, and may be found at markets until spring.

In large parsnips, cut around the woody core, only using the outer root.
