Veggie Cream Cheese Stuffed Peppers

These peppers take after bagels in this heavy-hitter veggie snack.

‘Veggie Shmear’ Cream Cheese Filling

In a food processor, add your vegetables and most of your herbs, and process until quite small but not pureed. Add your cream cheese, and pulse just until your ingredients are incorporated. Add your shmear cream cheese filling to a piping bag or freezer bag, fitted with a tip (or just cut the corner.)

Cream Cheese-Stuffed Peppers

  • Picnic peppers (or bell peppers or other sweet pepper variety) 
  • ‘Veggie Shmear’ Cream Cheese Filling 
  • Everything bagel seasoning

Cut your peppers in half length-wise (if using bell peppers or larger sweet peppers, cut into large slices) and remove the stem and seeds. Rinse and pipe with cream cheese mixture, adding everything bagel seasoning and remaining herbs as a garnish. Serve fresh for a great kid snack or picnic lunch appetizer!
