Vegan Lion’s Mane Mushroom Pasta

Vegan Lion’s Mane Pasta Recipe

Ingredients:

Start a pot of boiling water. Once boiling, add salt, adjusting the amount according to your pasta size and cook time (the longer the pasta stays in the water, the less salt is needed). 

In the meantime, tear your lion’s mane mushrooms into bite-sized pieces along the threads (not cross-wise). Mince your garlic and finely dice your shallot. Puree your canellini beans in a blender or food processor. 

In a searing hot pan, add olive oil and allow the mushrooms to sear. Add salt, let them release any moisture, and only turn once caramelised. Remove the mushrooms from the pan and set aside.

Lower the heat to medium, and add your shallot, dried basil, and optionally, chilli flakes, cooking until the shallot is translucent. Add your garlic, and cook just until fragrant, 30 seconds to a minute. 

Deglaze the pan with white wine. Allow to cook until reduced by about half, then whisk in pureed beans to thicken. 

Add your cooked pasta noodles and mushrooms to the pan, tossing to coat. Serve, optionally, with vegan Parmesan.
