Almost every decent meal starts with onions.
Scallions, Spanish, all-purpose yellow, pearl, Vidalia and Bermuda’s —-we love them all! All varieties of onions belong to the Lily family and have been around as long as we’ve kept history records. It’s said that In ancient Greece, Alexander the Great fed onions to his troops to “increase valor.” And apparently, during the U.S. Civil War, Ulysses S.Grant notified the War Department that he would “not move my army without onions.” Fortunately, he got his onions and we’ve got ours.
Onions of all types are low in calories, salt and fat. They are good sources of potassium and Vitamin C in addition, they contain two powerful anti-carcinogens Allicin and Sulfurophane These elements counteract the effects of carcinogens, thus inhibiting the growth of some cancers.
